Aged for 9 to 12 years - traditional Bourbon and sherry casks before being finished for one year in first fill sherry butts seasoned with Bodegas Lustau sherry, from the Jerez region.

Introduced in 2016 – 5th addition to Redbreast ‘family’ – 12yo, 12yo Cask Strength, 15yo & 21yo

The distillery boasts three 75,000 litre pot stills, and three column, which are used in combinations of three to produce different types of whiskey.

Old distillery – 1700s wool mill ; converted to distillery 1825 ;

New distillery 1966 – extended 2013 – now distils 60m litres pa

Nose:

Rich infusion of dark fruits, prunes, dates and figs with liquorice, marzipan, toasted oak and Redbreast spices. Other notes: creamy; toasted almonds ; cherry bakewells ; orange peel ;

Taste:

Creamy pot still with Redbreast spices balanced with richness of sherry finish and contribution of fresh Spanish oak. Other notes: Honey ; Crunchie-like chocolate bar ; cinnamon ; walnut ; poached plum

Finish:

Endless. Sweetness and pot-still spices endure while Oloroso Sherry and Spanish Oak have the last word. Other notes : Apple turnover & crushed cinnamon

Light toffee ; fudge ; slightly edgier the previous whiskey
