Barley from Rajasthan and Haryana to the foothills of Himalayas, Northern India.

Their barley has a higher husk content so produces an oilier wash. This translates to an oilier, richer spirit. This is one of the key reasons why all Paul John whiskies are bottled at least 46% and are all non chill-filtered.

John Distilleries is based in Bangalore, India and its single malt distillery is located in Goa (2008)

Peat for the smoky imported from Scotland

Water from the underground table of water in Goa, along with rain-fed water sources and water filtered through the Goan wetlands.

The distillery has two sets of Indian-made copper pot stills (wash and spirit) that can produce 6000 litres daily. Maturation takes place in a climate-controlled underground cellar that has around 10,000 barrels

Paul John single malts are naturally coloured and are released without age statements. Since whisky matures almost three times as fast in India than in Scotland, Paul John whisky is bottled at a relatively young age.

Double distilled – matured in American oak bourbon barrels; finished in Pedro Ximenez sherry casks

Much of the intrinsic characteristics of the Paul John PX owes allegiance to the famed intensely sweet and dark Spanish dessert sherry, having been gloriously finished in handpicked Pedro Ximenez casks.

 

Colour :Dark Copper..

Nose : Fig and apricot with a rare hint of banana. (MoM: Marmalade on toast, mocha, stewed plums and a kick of peppercorn.) – caramel, toffee

Taste : Sweet barley with creamy butterscotch, dry fruits and Christmas cake, (MoM: Espresso, raisins, sultanas, apricot)

Finish : Long and exquisite, with chocolate fudge, orange peel and exotic wine drenched nuts.

Balance : Intensely sweet like a dark Spanish dessert sherry, having been gloriously finished in handpicked Pedro Ximenez casks.
