As for showing More - the key here is that instead of using the Latest News includelet use the Filtered Item List includelet instead. This is sort of like Latest News on steroids.

You can configure it to display in the same way - selecting how many items to show and what details to show of each item, but you can also configure it with pagination, so that you see a Next and Previous button if there are more than your configured max number of stories.

As a simpler option you can also use the Child List includelet - which displays a list of pages below the current page in the hierarchy (with image previews etc where appropriate).

This is used extensively in the documentation pages itself, to show the lists of pages in each section.
