Under website settings / Site Domain:
The Domain Name shows prefix http:// before the box rather than https://.
Our site is https://thepcg.org.uk, but I do not seem to be able to enter this custom domain.

It'll work fine, just add the domain in. Once you set up the DNS A record (as in the instructions) Voice will create an SSL certificate and it'll work with https.
