Prawn Chilli Fry (sweet)

Ingredient

450g Cooked large prawns
1-2 large onion – chopped fine
1-inch grated Ginger
2 cloves garlic – crushed
1 tsp recheado masala paste (optional)
1-2 green chilli – chopped fine
1 tsp mustard seeds
2 large tomatoes - chopped
1 green pepper, diced (optional)
2 tbsp Tomato puree or tomato ketchup (if using ketchup don’t add the sugar)
1 tsp sugar
Salt/pepper
2 tbsp. Desiccated or fresh grated coconut
Oil for frying

Cooking Steps
  1. Fry the chopped onions, garlic and grated ginger in a little oil until pale brown. Add the green chilli and mustard seeds and fry for a further 2 minutes. 
  2. Stir in a teaspoon of recheado masala (optional) if you like it spicy, chopped tomatoes and tomato puree and fry the mixture to a paste. Add more oil if too dry. 
  3. Stir  in the cooked prawns, sugar and the deisicated coconut and fry for a further 2 minutes. Taste and adjust seasoning if required

 

Serve garnished with chopped coriander and lemon wedges.
