Narciso’s Fried Pork Chops
Ingredients
4 Pork Chops
1 inch Ginger or 1 tsp ginger paste
6 cloves garlic– or 1 to 2 heaped tsp garlic paste
2 chopped Green Chill
1 tbsp chopped coriander
½ tsp ground pepper
1tsp salt
Lea & Perrin
For the Coating:
1 Egg (well beaten)
¼ cup Breadcrumbs
Salt – ¼ tsp.
Cooking Steps
Step 1
Pound each chop with a meat mallet or rolling pin to flatten it. Rub each chop with a little salt on both sides.
Grind or pound the ginger, garlic, green chili and green coriander to a coarse paste. Mix in the pepper and salt. Apply the paste to each chop and let it marinate for a couple of hours or overnight.
Step 2
Beat the egg well with the salt and 1 tbsp. of water.
Heat oil in a frying pan. Dip a chop in the beaten egg, roll in the breadcrumbs till well coated and place on the pan on medium heat. Do this for all four chops. Cover the pan with a lid and cook for 10 to 12 minutes on each side on low heat till the coating is crispy and the meat is cooked.
Serve: with fried or oven chips and baked beans and a fried egg.
