Goan Spicy Prawn & Coconut Chilli Fry
This versatile paste works well as a filling for pastry cases (forminhas) or vol au vents; as a sandwich spread; or as a topping for Ritz cracker biscuits, perfect for serving with drinks
Ingredients
450g Fresh prawns cut fine
3 tomatoes chopped fine
1 tsp Goan red masala
115g fresh coconut (or reconstituted desiccated coconut)
1 green chilli cut fine
1 tsp salt and ½ tsp pepper.
½ tsp sugar
Walnut size ball of tamarind soaked in water or 1 tsp tamarind paste
Cooking Steps
Step 1
Fry the chopped tomatoes in a little oil until soft. Add the Goan red masala and fry for a couple of minutes.
Add the prawns and cook for 10 mins until the prawns turn pink and are well fried.
Step 2
Add the fresh coconut (or pre-soaked desiccated coconut) and chopped green chilli and season with salt and pepper. Add the sugar and tamarind paste and mix well.
