Caldo de Galinha (Goan Style Chicken Soup)

Caldo de Galinha is a traditional Portuguese broth, but the Goan version beautifully marries Portuguese cooking style with  local medicinal spices. Affectionately known as "Goan penicillin," this soup is the ultimate remedy; at the very first sniff of a cold or illness, Goan Mais (mothers) will reach for a fresh chicken to whip up this broth. It is a heart-warming soup that offers both a comforting hug and deep nourishment just when you need it most.

Ingredients

300g Chicken wings
1 onion- cut in half
1 carrot- cut in half
2 large cloves garlic
1” piece of ginger
10 peppercorns
2 cloves
1 inch cinnamon
½ tsp turmeric
½ tsp coriander powder
1 vegetable stock cube
1 chicken stock cube
Salt & Pepper to taste

For the Hearty Broth

Pasta Quills
Frozen vegetables or Greens/Spinach

Cooking Steps

Step 1
Place chicken wings in a deep saucepan and cover completely with water.

Add halved onion, carrot, whole garlic cloves, ginger, peppercorns, cloves, and cinnamon stick.

Sprinkle in turmeric and coriander powders, then crumble in the stock cubes.

Bring to a boil, then reduce heat, cover, and simmer for 40-60 minutes until chicken wings are tender and falling apart.

Step 2
For Clear Consommé:

Strain the broth and serve hot.

Step 3
For Hearty Broth:

Remove chicken wings, ginger, and garlic with a slotted spoon. Set aside in a colander.

Mash the cooked garlic cloves and return to the soup.

Add pasta quills, chopped cooked carrots from the broth, and a handful of frozen vegetables or greens.

Simmer until pasta is tender and vegetables are cooked through.

Taste and season with additional salt and pepper if required.

Serve steaming hot in bowls,
