Mahamari is a classic fried bread from the Kenyan coast. A true mahamari should be slightly crunchy on the outside, subtly sweet, and hollow on the inside—creating the perfect pocket for stuffing. In her Mombasa kitchen, Grandma Xana filled these golden pockets with potato bhaji or her special chili prawn fry, packing them up for family beach picnics and cozy evenings at the drive-in movies.
Mahamari (Swahili Fried Bread)
Ingredients
4 cups plain white flour
1 cup coconut milk or full fat milk
1 egg
1½ heaped tsp dry Yeast
¾ cup sugar
½ tsp ground cardamom
6 cups of oil in a wok or karahi, heated to medium
Cooking Steps
Step 1
Sift the plain flour into a deep glass or steel bowl and mix in the ground cardamom. In a separate microwave-safe mug, warm the milk for 30 seconds (it should be warm to the touch, not hot). Add the yeast, egg, and sugar to the milk, whisking with a fork until dissolved and well combined.
Step 2
Pour the milk mixture into the flour. Knead by hand or use an electric stand mixer fitted with a dough hook until a smooth, cohesive dough ball forms.
Step 3
Cover the bowl tightly with cling film and place it in a warm spot. Let the dough rise for 4 hours (or overnight) until doubled in size. Once risen, gently knead the dough again for 5 minutes, then cover and allow it to rest for 1 more hour.
Step 4
Divide the dough into 8 equal portions and roll each into a smooth ball. Line them up on a tray, cover, and let them rest for 15 minutes. Working with one ball at a time on a lightly floured surface, roll it out to a ¼-inch thick circle, then cut it into 4 equal triangular quarters.
Step 5
Heat the oil in a wok or karahi over medium heat. Test the temperature by dropping in a tiny piece of dough; if it floats immediately, the oil is ready.
Gently slide 1 dough quarter into the hot oil. Using a slotted spoon, lightly submerge it while basting the top with hot oil—this creates that famous hollow air pocket! Once it puffs up and turns golden, flip it over. Repeat with up to 3 or 4 pieces per batch. Transfer the golden fried mahamari onto paper towels to drain excess oil.
To Serve
Sweet: Enjoy plain or lightly dusted with powdered sugar.
Savoury: Slice open the hollow pocket and stuff with savory potato bhaji or spicy chili prawn fry.
