Goan Banana Fritters (Pancakes)

Ingredients

2-3 very ripe bananas

2-3 tbsp sugar

4 heaped tbsp self-raising flour

¼ cup Milk

1 egg- beaten

Pinch of salt

1 cardamom ground (optional)

 
Cooking Steps

Step 1
Roughly break up the bananas with a fork, add the sugar and mash to a smooth paste.

Add in the beaten egg, the flour, pinch of salt, ground cardamom (optional) and sufficient milk to mix everything to a thick batter.

Let the batter stand for a few minutes

Step 2
Heat a non-stick frying pan over a medium heat and add a knob of butter and tsp of oil. When it's melted, spoon in 1 tablespoons of the batter to the pan.  Wait for about 3 minutes until the top of the pancake begins to bubble, and the edges begin to set.  Flip it over and cook for another minute on the other side until both sides are golden brown and the pancake has risen slightly.  If the pancake is too dark, reduce the heat slightly for the next round.

Drain the pancakes on kitchen paper and sprinkle over with sugar while the pancakes are still warm.
