Ingredients

115g margarine (softened at room temperature)

150g Caster Sugar

285g ripe bananas - peeled and mashed

2 large eggs (lightly beaten)

60g Brazil nuts (roughly chopped and dry roasted in a pan for 3-4 minutes)

1/2 tsp vanilla essence

230g self raising flour (sifted)

Cooking Steps

Step 1
Preheat your oven to 160C (140 c Fan / Gas Mark 3/ 325 F)

Grease and line a 21-24cm (approx 2 1b/900g) loaf tin.

Step 2
In a large mixing bowl, beat the margarine and sugar together until pale, light and creamy.

In a seperate bowl, whisk together the mashed bananas, eggs, chopped Brazil nuts and vanilla essence. Gradually pour the banana mixture into the creamed margarine and sugar, stirring gently  until combined.

Step 3
Sift in the self raising flour.

Using a large metal spoon, gently fold the flour into the wet mix just until no dry streaks remain.  Avoid over beating to keep the loaf light.

Pour the batter into the prepared loaf tin and smooth the top with a spatula.

Step 4
Bake for 1 hour 15 minutes to 1 hour 30 minutes in a cool oven 160c or 325 F.
Check after 1hr 10 minutes so it doesn't dry out.

Allow the loaf to cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely..
