Thai Garlic Prawns

This is a quick and delicious starter which can be whipped up in 10 minutes and served with a chopped green salad and small tortilla wraps.

Ingredients

1kg medium green king prawns, peeled,
6 garlic cloves, roughly chopped
2cm piece fresh ginger, peeled, roughly chopped
2 shallots, peeled, roughly chopped
1 lemongrass stalk (white part only), roughly chopped - optional
1 long red chilli, roughly chopped
½ cup stir fry oil or vegetable oil
1 tbsp lime juice
2 tsp grated palm sugar or soft brown sugar

To Serve Chopped green salad and Lime wedges, small tortilla wraps

Cooking Steps

Step 1 Place garlic, ginger, eschalot, lemongrass and chilli in a small food processor. Process until finely chopped.

Step 2 Heat oil in a large, deep-frying pan over medium-high heat. Add garlic mixture. Cook, stirring, for 2 minutes or until fragrant. Add prawns. Cook, tossing occasionally, for 3 to 4 minutes or until prawns are pink and cooked through. Remove from heat. Add lime juice and sugar. Toss to combine. Sprinkle with coriander leaves.

Serve prawns in oil mixture with lime wedges and sprinkled with coriander leaves.
