Goan Meatballs in Coconut Curry
Ingredients
500g minced beef
½ tsp black pepper
½ tsp turmeric,
½ tsp cumin,
1 tsp salt
30g red onions chopped fine
2 tbsp fresh chopped coriander
1 chopped green chilli
½ cup breadcrumbs
2 large eggs
Cooking Steps
Step 1
Make the Meatballs:
Mix all the above ingredients and roll into meatballs. Lay in a flat dish and leave to marinate in the fridge.
Step 2
For the curry:
Add oil to a pan. Add 4 cloves, 4 cardamoms, 1-inch cinnamon stick and a few curry leaves.
Add 1 cup red chopped red onions. Fry well.
Add ½ tsp ginger and 1 tsp garlic paste.
Add 3 tbsp tomato puree.
Fry until oil separates.
Add 1 tsp chilli powder, ½ tsp turmeric, 1 tsp cumin. Fry for a minute.
Add 1 ½ cups water plus 1 cup coconut milk. Season with 1 ½ tsp sugar and 1 tsp salt.
Simmer and add ½ - 1 tsp of garam masala plus 2 green chillies.
Step 3
Remove the meatballs from the fridge and add to the curry sauce. Cover and cook for 5 minutes. After this time, shake the pan to turn over the meatballs and cook for a further 20 minutes.
Add chopped coriander, cover and cook for a further few minutes.
