Chicken Tikka

Ingredients

1 whole chicken cut into pieces skin removed (or chicken thighs)
2 tbsp tikka paste (bought)
2 onions blended
4 cloves garlic, 2” fresh ginger or 1 heaped tbsp Ginger/garlic paste
6 tbsp natural yoghurt
1 tbsp pepper (or to taste)
½ bunch fresh coriander
Juice of 1 lemon
Salt
1 tbsp chopped mint

Cooking Steps

  1. Cut the chicken (skin removed) into small pieces. Add the yoghurt to a bowl and stir in the blended onion, ginger, garlic, pepper and tikka paste. Add the chicken pieces and remaining ingredients and mix well.  Marinate the chicken overnight in the fridge. 
  2. Bake in a hot oven covered in foil for 40 minutes. Remove the foil and cook for a further 20 minutes until the chicken is tender and slightly charred.

 

Serve: with a cucumber raita and green salad.
