Goan Pan-Fried Cod Roe

Ingredients

Poaching Liquid for Cod Roe

1 large Cod roe
1/tsp coriander seeds
½ tsp pepper seeds
½ tsp Turmeric powder
2 tbsp lemon juice
1 tsp salt
1 cup of boiling hot water.

Spice Marinade

½ tsp turmeric powder
½ tsp pepper
½ tsp cumin
½ tsp chilli powder
1 tsp ginger garlic paste
1 tbsp lemon juice
1 tsp salt
1 tbsp tamarind paste

 

Cooking Steps
  1. Mix the coriander seeds, peppercorns, turmeric, salt and lemon juice in a saucepan.
  2. Place the cod roe in the spice mixture and add boiling water.
  3. Cover and simmer on very low heat for 10-15 minutes. Note:  Keep heat low to prevent the roe from bursting.
  4. While the roe is poaching, mix the spice marinade ingredients together to a smooth paste.
  5. Remove the poached cod roe from the pan and let it cool completely.
  6. Slice the cooled roe into ½ inch thick rounds
  7. Brush both sides of the roe slices generously with the spice marinade.
  8. Heat oil in a pan and shallow fry the marinated roe slices until golden brown on both sides.

Serve hot with a fresh salad of sliced red onions, coriander leaves and lemon wedges.
