Goan Pan-Fried Cod Roe

Cooking Steps
- Mix the coriander seeds, peppercorns, turmeric, salt and lemon juice in a saucepan.
- Place the cod roe in the spice mixture and add boiling water.
- Cover and simmer on very low heat for 10-15 minutes. Note: Keep heat low to prevent the roe from bursting.
- While the roe is poaching, mix the spice marinade ingredients together to a smooth paste.
- Remove the poached cod roe from the pan and let it cool completely.
- Slice the cooled roe into ½ inch thick rounds
- Brush both sides of the roe slices generously with the spice marinade.
- Heat oil in a pan and shallow fry the marinated roe slices until golden brown on both sides.
Serve hot with a fresh salad of sliced red onions, coriander leaves and lemon wedges.
