Potato Bhaji

Ingredients

4 large Potatoes (Boiled, peeled and cubed)

4 tbsp Oil

12 curry leaves

1 tsp mustard seeds

1 tsp cumin seeds

2 onions chopped fine

2tbsp ginger (grated)

2 cloves garlic chopped fine

½ tsp turmeric powder

½ tsp chilli powder

2-3 green chillies chopped fine

1 tsp salt

½ tsp sugar

¼ cup water

3 tbsp Coriander finely chopped

Juice of 1 lemon

Cooking Steps

Step 1
Heat 4 tbsp oil in a pan and when hot add the mustard seeds, cumin seeds and curry leaves. When they start to splutter add the chopped onion, ginger and garlic and fry slowly until the onions are soft and translucent.  Add the turmeric, chilli powder, salt and sugar and fry for a minute.

Step 2
Add the cubed boiled potatoes and stir carefully until they are coated in the spices. If it is too dry, sprinkle with a ¼ cup of water and stir again.

Step 3
Sprinkle the potatoes with the lemon juice and stir in the chopped coriander and chillies. Mix carefully so as not to break the potatoes. Taste and add more seasoning if required. 

 

Serve: hot with pooris and a dollop of plain yoghurt
