Thai Garlic Prawns

This is a quick and delicious starter which can be whipped up in 10 minutes and served with a chopped green salad and small tortilla wraps.

Ingredients

1kg medium raw king prawns, peeled and deveined
6 garlic cloves, roughly chopped
2cm piece fresh ginger, peeled, roughly chopped
2 shallots, peeled, roughly chopped
1 lemongrass stalk (white part only), roughly chopped - optional
1 long red chilli, roughly chopped
½ cup stir fry oil or vegetable oil
1 tbsp lime juice
2 tsp grated palm sugar or soft brown sugar

To Serve Chopped green salad, lime wedges and small tortilla wraps

Cooking Steps

Step 1:   Place garlic, ginger, shalots, lemongrass and chilli in a small food processor. Process until finely chopped.

Step 2:   Heat oil in a large, deep-frying pan over medium-high heat. Add garlic mixture. Cook, stirring, for 2 minutes or until fragrant. Add prawns. Cook, tossing occasionally, for 3 to 4 minutes or until prawns are pink and cooked through.

Remove from the heat. Add the lime juice and sugar. Toss to combine. Sprinkle with coriander leaves and serve.
