Prepare the Orange Carrot Layer
- Grate 2 medium carrots. Add a drop of orange colouring (optional) and sufficient mayonnaise to form a spreadable paste.
Prepare the Green Chutney Layer
| 1 cup of fresh or pre-soaked desiccated coconut ½ - 1 bunch Coriander leaves, thickly chopped 1/4 onion chopped 6 green chillies (to taste) 2 large garlic cloves 1 inch piece of ginger chopped |
6 black peppercorns ½ tsp of cumin seeds 3 tsp of sugar Tamarind- size of a walnut (soaked in a little hot water) or 1 tsp tamarind paste 1 tsp Salt (to taste) 1 tsp Jif lemon or fresh lime juice |
- Bend the chillies, ginger, garlic, onion, peppercorns, cumin and tamarind paste with a little water (1/4 mug)
- Add the chopped coriander leaves and fresh coconut (or reconstituted desiccated coconut), and continue grinding until the mixture is a fine thick paste. If the mixture becomes too thick during grinding add a little more water.
- Finally, add the salt, sugar and a few drops of Jif lemon or lime juice and blend everything together well. Taste and adjust seasoning adding more salt or sugar. Mix butter into the chutney to make a spreadable paste.
To make Tri colour sandwiches:
Ingredients
1 loaf of white sliced bread
Carrot paste (orange layer)
Coconut coriander chutney (green layer)
Bottled Mayonnaise
- Prepare the Orange Layer (Bottom) (Creates the top band of the sandwich when assembled)
Lay the first slice of white bread flat. Spread the carrot paste evenly across the top side. - Prepare the Middle Slice (Binds the orange layer)
Spread 1 tablespoon of mayonnaise over one side of the second slice of bread. Plate it mayo-side down onto the carrot paste slice. - Prepare the Green Layer (Creates the Bottom colour band)
Spread the coconut coriander chutney evenly over the exposed top side of the second slice. - Prepare the Top Slice - Binds the green layer
Spread the remaining 1 tablespoon of mayonnaise over one side of the third slice of bread. Place it mayo-side down onto the green chutney layer. - Slice and Serve - Reveals the distinct colour layers
Press gently on the sandwich stack, trim the crusts, and slice diagonally to reveal the tri-colour layers.
