King Prawns In Chilli Jam Sauce

This is a quick and delicious starter which can be whipped up in 10 minutes.  Serve with a chopped green salad and small tortilla wraps.

Ingredients

1 kg Raw King Prawns, shelled & deveined

2 tbsp vegetable oil

2 tbsp sesame oil

6 cloves garlic

2 tbsp grated ginger

1 tsp hot chilli flakes

125 ml water (1/2 cup)

3 tbsp Siracha sauce

2 tbsp soy sauce

3-4 tbsp soft brown sugar

Garnish

Sesame seeds

Spring onions

Red chillies (optional)

Cooking Steps

Step 1

Heat oil in a large pan over high heat.  Add half the prawns and sear for about 1 minute on each side until golden.  Remove into a bowl.  Repeat.

Step 2

Turn the heat to medium-low and add the sesame oil to the pan.  Add the garlic and chilli flakes and cook until the garlic turns brown.

Step 3

Add the water, then Siracha sauce, soy sauce and sugar.  Stir, increase heat to medium high, and let it simmer for a few minutes or until the sauce starts to thicken to a thin syrupy consistency.

Step 4

Return prawns into the pan and toss to coat in the sauce and cook for 1-2 minutes until sauce is reduced and coats the prawns nicely.

Garnish with sesame seeds, fresh chilli and spring onions.

Serve with plain boiled rice or as a delicious starter with small tortilla wraps and a green salad.
