700g mangoes (partially ripe) 1 tbsp oil 2 “cinnamon 4 green cardamoms 1 star anise 2 tbsp grated ginger 1 tsp red chilli powder 2 tsp ground fennel seeds 2 tsp ground cumin 1 ½ cups brown sugar or half jaggery/sugar ¼ tsp salt (to taste) ½ tsp black pepper ½ cup vinegar 1 cup raisins minced or finely chopped (optional) 1 cup finely chopped almonds |
Cooking Steps
Step 1
Wash and peel the mangoes. Grate them using a grater or dice them to 1/4 inch cubes.
Step 2
Heat the oil and add the cinnamon, cardamoms and star anise. When they begin to sizzle add the ginger and fry for a minute.
Step 3
Lower the flame and stir in the red chilli, ground cumin and fennel powder.
Add the diced mangoes, sugar and vinegar. Bring to the boil.
Stir and cook covered on a medium heat until the mangoes turn mushy.
Mix in the chopped raisins and almonds. Open the lid and cook further until the mixture turns slightly thick yet runny.
Step 4
Add salt and mix well. Taste test and add more sugar, chill salt and pepper or vinegar if required. If you add more sugar, cook further until the sugar dissolves.
Leave to cool and bottle in sterilised jars. Store in the fridge.
