GOAN FORMINHAS (GOAN CANAPES)
Ingredients
Pastry:
1 1/2 cups plain flour
2 egg yolks
2 tbsp butter, room temperature
1 tsp salt
Warm water to mix
Filling:
1 large potato, cubed and boiled
2 small carrots, cubed and boiled
Handful of green peas boiled
1-2 tbsp Mayonnaise
1 tsp milk
Salt & Pepper
Mix together and season with salt and pepper
Cooking Steps
Step 1
Rub the butter into the flour to make a light breadcrumb texture. Add the beaten egg yolk and a little water (if required) to make a soft dough. Cover the dough with cling film and leave for 1/2hr.
Step 2
Roll the pastry dough thinly and using a fluted biscuit cutter cut into circles. Ensure the circle is slightly bigger than the mould.
Place each circle into the mould and press lightly to form the shape. Stack 4 moulds together and place an empty one on the top. Tie the stack together with a cooking string and keep aside. This ensures the shape remains intact when frying.
Step 3
Heat oil, and deep fry the mould stack. Once the edges are golden brown remove and let it cool. Cut the thread and unmould. When cool store in an airtight container until required.
Fill the cases with vegetable mayonnaise, prawn chilli fry, or tuna mayonnaise
