Ingredient

450g Cooked large prawns

1-2 large onion – chopped fine

1-inch grated Ginger

2 cloves garlic – crushed

1 tsp recheado masala paste (optional)

1-2 green chilli – chopped fine

1 tsp mustard seeds

2 large tomatoes - chopped

 

2 tbsp Tomato puree or tomato ketchup (if using ketchup don’t add the sugar)

1 tsp sugar

Salt/pepper

2 tbsp. Desiccated or fresh grated coconut

Oil for frying

 

 

Cooking Steps

  1. Fry the onions in oil until pale brown. Add the recheado masala (optional), green chilli and mustard seeds, fry for a few seconds.
  2. Add the chopped tomatoes, tomato puree or tomato ketchup and fry to a paste. Add more oil if too dry. 
  3. Mix in the cooked prawns, sugar and the coconut and fry for 2 minutes. Taste and adjust seasoning.

 

Serve garnished with chopped coriander and lemon wedges.
